1 small banana
Pumpkin pie spice 1/4 teaspoon
R's KOSO 1~2 tablespoon
Extra virgin olive oil (or any high heat tolerant oil) 1 teaspoon
1, Mash: in a medium bowl, mash the banana with a fork.
2, Mix: add in the egg and pumpkin pie spice and mix.
3, Cook: heat a pan over medium heat and add oil of your choice. Drop a spoonful of batter on the pan and let cook until the bottoms are golden brown. (You will not see any bubbles like traditional pancakes.) Flip and cook until golden brown.
4, Serve: pour R's KOSO on the pancakes. Top with berries or other fruit, nuts, or whipped coconut cream. Add any sweetener such as honey, maple syrup, or date syrup if you like.
