【RECIPE】Postbiotic Spinach Pancakes

Spinach pancakes are not only delicious but also packed with nutrients, especially from the star ingredient, spinach.

Spinach is not just Popeye's favorite. It's a nutritional powerhouse. 

Spinach is packed with insoluble fiber, which adds bulk to stool and promotes regular bowel movements. This can help prevent constipation and support overall digestive health.

It is an excellent source of various vitamins and minerals. Here are some vitamins and minerals you will get from spinach.

  • Vitamin A supports vision and immune function. 
  • Vitamin C is a powerful antioxidant that boosts skin health and immunity. 
  • Vitamin K1 is crucial for bone health and circulation. 
  • Folic acid (vitamin B9) is essential for normal cellular function and tissue growth. 
  • Iron is necessary for hemoglobin production and oxygen transport in the body.

Recipe

Ingredients (about 8 mini pancakes)

R’s KOSO 1 tablespoon/R’s KOSO lower sugar 2 teaspoons

Plain yogurt 1/2 cup

1 egg

Banana 1/4 

Baby/salad spinach 1 cup 

Rolled oats 2/3 cup 

Cinnamon 1 teaspoon

Pinch of sea salt

Chopped nuts/cacao nibs 2 tablespoons (optional) 

Maple syrup or honey if you have a sweet tooth

 

Instructions

1. Add all the ingredients except the toppings to a blender (food processor) and blend until smooth.

2. Heat a pan to medium-low heat. Coat pan with oil. Drop 2~3 tablespoons of batter into the pan. Cook until the edges of the pancake begin to appear solid then flip. Cook for another 2 minutes.

3. Add toppings of your choice and pour R's KOSO for more flavor.
