Today, we’re introducing a delicious, gut-friendly dessert that’s both beautiful and nourishing: Blended blueberry chia pudding with a dark chocolate shell. This recipe is super easy to make, and it’s packed with ingredients that your gut microbiome will love.
First, let’s talk about the other gut-loving ingredients.
R's KOSO
Unlike typical koso drinks, R’s KOSO is made by fermenting over 100 kinds of fruits, vegetables, seaweed, and herbs for more than a year.
It’s rich in prebiotics, probiotics, and postbiotics, which all play a powerful role in improving gut health, digestion, and immune function.
Blueberries
Blueberries aren’t just tasty. They’re one of the best fruits for gut health. They’re rich in polyphenols, natural plant compounds that help increase the diversity of beneficial gut bacteria. Polyphenols act as prebiotic-like substances, supporting the growth of friendly bacteria in your gut, which are associated with a healthier gut lining and improved metabolic health.
They’re also packed with antioxidants, especially anthocyanins, which have anti-inflammatory properties that may reduce gut inflammation and support overall digestive wellness.
Chia Seeds
Chia seeds are a gut health superstar. They contain both soluble and insoluble fiber, which together help keep your digestive system moving and support a healthy microbiome. The soluble fiber forms a gel-like texture when mixed with liquid (like in this pudding), which slows digestion and feeds your good gut bacteria, acting as a prebiotic. This not only supports regular bowel movements but also helps stabilize blood sugar levels and improve nutrient absorption.
Together, these two ingredients create a powerful base that promotes long-term gut health, especially when paired with the fermented goodness of R’s KOSO.
